This was another fantastic round of BaW. Thank you all for contributing to such success and learning.

As a token of my appreciation, here's my gift for the Graduation Party, my classic codfish recipe. Enjoy!  :-))

Oven-baked codfish (Bacalhau assado no forno)

(For 4 people)

   

2-3 pieces frozen cod (thick)

3-4 garlic cloves

3 dl (1 1/4 cups) extra virgin olive oil (maybe more)

6-8 medium-size potatoes

 

Thaw the cod for a few hours and place it in an ovenproof dish.

Wash the unpeeled potatoes well and cut them in halves or quarters. You can peel and slice them, if you prefer. Then place them around the cod. Next peel and slice the garlic cloves finely and spread over the cod. Finally, pour the olive oil over the cod and potatoes. Be generous!

Place in a 210 oven for 30-40 minutes (until everything is light brown). Halfway through the baking process open the oven and pour hot olive oil olive oil over the cod and potatoes with a spoon.

 

 

"Bacalhau assado" deserves a bottle of good red or white wine

I prefer red. And the more... the better!!!

I'd like to share with you my recipe for:

 

Rice Pudding (Arroz Doce)

 

Ingredients: 

One cup of rice, water, 1 thin slice of lemon peel, lemon zest, 1 small pinch of salt, 1 liter of fresh pasteurized milk, 1 can of condensed milk, 1 cinnamon stick, 4 egg yolks, cinnamon powder.

 

Preparation:  

Bring 4 cups of water to a boil (4 times the volume of rice). Add the rice, a pinch of salt, a thin slice of lemon peel, lemon zest (the rest of the lemon), the cinnamon stick, and stir. Reduce heat, cover and simmer for 20 minutes or until rice is well cooked. Add boiling milk. After 5 minutes of boiling add the condensed milk. The final texture should be creamy.

Remove from heat, withdraw the cinnamon stick and the slice of lemon peel and add the egg yolks previously diluted in a little milk. Bring to the boil again, stirring constantly. Add more milk if you think it is not creamy enough.

Pour into a bowl or platter and sprinkle or decorate with ground cinnamon while hot.

 

 

If you prefer, you can have a slice of my chocolate cake!

Dear BAWers 2012! I want to show you a typical Czech dish, my husband loves it and would gladly have it for a party meal, yet I cannot eat it as it is too heavy for me. Here it is, goose with cabbage and dumplings. Actually this one is St. Martin's goose. Served on Sunday nearest to St. Martin's holiday (November 11th). Enjoy.

 

I am also adding for you photos from our very special activity - skating on a lake. This lake is huge and freezes completely only once in 10 or more years. Last time we skated there was some 15 years ago. So here it is. Svetlana

Dear Bawers!

It's great to see so wonderful things you have shared here. Here is my part as well. My dear mods know how I had to make so many cakes, rolls, buns, cookies, pancakes for my beloved family (hubby and two boys) during BaW2012, so here is the animoto of my time in the kitchen but never too far from my laptop. It was with me all the time :)) Enjoy some Croatian specialties, Marijana!! :)

 

 


 

Dear BAWers - Coordinators, moderators and participants,

Certainly, no words are enough to appreciate the amount of value you've added to our lives, but we pray that the Almighty will continue to shower blessings onto your knowledge for more service to humanity. For my party gift, I really wanted to make the most delicious African dish for you, but unfortunately I couldn't lay my hands on some important and palatable condiments. So, i prepared (and I'm sure you know how to do as well - so no question!) this Arabian delicacy called Falafel  with tea and indeed a special frame for you to hang in you room! Thank you million times for the teaching, learning, hugs, smiles, cheers and all the regards! Lawan :)

Here is my special pumpkin bread recipe that is a family favorite and from the Amish area in Ohio. I'm so happy to share it with my fellow BAW2012 participants, moderators and presenters! Enjoy this yummy bread!

HAPPY GRADUATION DAY!

 

Cream:

2 2/3 c. sugar

2/3 c. margarine

4 eggs

 

Add:

2 c. pumpkin

2/3 c. water

 

Sift & Add:

3 1/3 c. flour

1/2 t. baking powder

2 t. baking soda

1 1/2 t. salt

1 t. cinnamon

1/2 t. cloves

 

Add: (optional)

2/3 c raisins or dates (chopped)

2/3 c. nuts (chopped)

 

Bake @ 350 degrees for 1 hour
